One of my fav Pheasant recipes, the Calvados adds another layer of flavour and for my pallet I prefer the extra tang and lightness of Creme fresh over Double Cream.

Only had Pheasant once, being a peasant it was usually rabbit or pigeon:D pigeon is an acquired taste as is rabbit tbh. My dad loved both as he grew up in that environment; his best mate's dad wad a gamey
Agreed re Wild Pigeon, a lot depends on what they have been feeding on, I have on occasion had a few that came out particularly gamey and a tad bitter tasting, French Squab's tend to be less gamey.
