250g Kamut, 100g wholemeal, 350g white organic, 10-15 chopped Jalapenos and a lot of cheddar mixed into dough. 10g salt, 3 tablespoons extra virgin olive oil.
Cheddar dumped on top about 30 minutes into bake. 50 minute bake for hard, dark crust. Dutch oven method. 240 deg C lid on, 220 deg C lid off. 75% hydration. 24 hour ferment.
Invented by me recipe. Could be rubbish. I suspect not, but hey, you never know.
Just out the oven so I won't cut into it.
Will devour for supper.

I started playing with jalapeños and cheese in loaves trying to replicate the bread I used to get in Costco in the Bay Area in the early 90's. Makes a good 'snack' breakfast when toasted (or as a base for huevos rancheros style eggs or eggs and avocado).
