pork, onion, salad onion, yellow and green bell pepper(can add red etc), umami and veg stock, mixed herbs, and lots of paprika. seasoning etc to choice... thickened and then when about to serve, add single cream. try not to boil after adding cream as it'll split.
serve on a bed of rice of choice.
ps, can also add sherry if you wish

For the past couple of weeks or so, we have been living off salads (photos to follow), but the temperature has dropped and the weather turning a little autumnal.
So tonight we had baked salmon filets with boiled potatoes, carrots and steamed brocolli, red onion, sweetcorn niblets and petit pois. A little sauce hollandaise on the side.

(According to my partner who knows about these things, the mango had been picked too early - so wasn't quite ripened to perfection.)
All washed down with a rather nice 2018 Château Beauvillage, Cru Bourgeois Médoc
https://media.tanners-wines.co.uk/me.../r/cr504_1.jpg
Gold medal winner 2020, Vinales Internationales, Concours Oenologues de France.
Château Beauvillage lies in the tiny Médoc hamlet of Couquèques, close to the Gironde estuary and the Atlantic, both of which help to moderate the climate. The property was founded in 1925 by the grandfather of the current owner, who passed his love of the land and wine to his sons Christian and Claude. Today it's run by the third generation, Valérie Bugada Jean and her husband, Eric, who firmly believe in sustainable viticulture. Their 24 hectares of 35 year old vines have a high percentage of Merlot for the Médoc, but the clay, limestone and gravel soils are well suited to this grape, while 10 hectares of Cabernet also grow well, providing crunchy cassis notes and structure.
