Cheers... Yeah, legs also work, but in America it would traditionally be ribs or wings that are served, and as it was an American dish, we used wings (also because I had ribs the other day). Remember what I said earlier about putting the right bits together (what traditionally would accompany what)?;)
The charring is because they were chargrilled on the BBQ. Makes a big difference to the flavour!
