Got this off butcher on Monday .. 2slices of Scottish 'salmon cut' rear top single muscle rump cut like silverside but much tastier.
Gets it's name from it's similarity to a big fillet of salmon.
Pricy stuff but I love it as a braised steak with gravy.
Currently reducing the juices I cooked it in.

Reducing just means concentrating the juices. A gentle simmer takes off water and leaves a thicker tastier stock that needs very little thickening. I added a dollop of BBQ sauce I get and keep in fridge.
Ps nowt wrong with Aldi Lidl steaks but I prefer butchers meat if I can get it. When not I get it from Morrisons or Tesco delivered with groceries
