Hard to see whats actually in this but it’s kind of like a lasagna made with corn tortillas and slow-cooked chicken chilli.
Cooked the chilli yesterday using chicken thighs, black beans and a mix of chili peppers (Ancho, Cascabel, Jalapeño, Chipotle and Guajillo), tomato, chicken stock, garlic and onion.
Just layered the chilli with corn tortillas and a bit of grated cheese on top.
Served with a bit of salad with honey/mustard dressing.

Apple for 'pud'.
And a glass or two of 2015 Chateau D'Augan, Bordeaux. (Gold medal winner at the Concours de Bordeaux 2016)

I must be getting hungry, I keep getting visions of food. Chicken pie or fish in breadcrumbs appeal. Not sure which yet.
I really fancied bangers 'n mash tonight. Tesco own brand pork chipolatas (not tried them before) with my super creamy mash and 'enhanced' baked beans, plus fried mushrooms.
I'm going to enjoy this. There's rather a lot! :D

Tonight was Pasta with Tuna and tomato sauce.
Recipe: 1 onion, 2 cloves garlic chopped. Drain oil from can of tuna and cook onion and garlic in this. Add tin of tomatoes, tuna, oregano, pepper, 1 tsp sugar, salt and cook 15 mins. Eat with spaghetti and grate cheese over top. Very quick and very yummy.
Stir fry veg prepared and steamed for tonight's meal.

I've just bought baby potatoes and a cabbage.
Not decided what to have with them yet, maybe fish in parsley sauce or chicken with gravy. Might have carrots too.
Think I may go with chicken, as the baby spuds will be in butter 'n parsley and parsley sauce with the fish too may be a bit much.
Is that a sweet n sour ? If it is, how do you make the sauce ?
was hoisin and plum with a bit of chilli..
sweet n sour is, tomato paste, rice vinegar or similar, soy(i use light), small tin of pineapple and a bit of thickener of choice...i use arrowroot. Pre cooked chicken and some thin cut carrot and red pepper plus onion; I use shallot and green)(steamed first). quick stir fry and your done
In the end I scrapped my original plans. Realised I had spring rolls that needed using, so I've got those with basmati/brown/wild rice with peas, sweet 'n sour chicken (Tesco tinned) and button mushrooms. Should be OK. Microwaved the rice, came out nicely.

Your s&s is quite similar to how I do it Grant. I'm not a fan of tomato in the s&s though and I tend to throw it all in a jug and let the microwave do it's thing (with the occasional stir).
4 Tbs Sugar, 6 Tbs Rice (or White Wine) Vinegar, 1 Tbsp Light Soy, 2 Tbs Water, Pineapple Juice & Cornflour to taste (usually bulk it out with Pineapple Juice). 3 or 4 mins in the microwave, stirring every minute.
Will try it that way sometime
. Had not energy for cooking tonight so had a packet of nissin noodles and some chicken pieces. 4 min meal
