If your butcher can get hold of Gloucester old spot (from this breed: https://www.google.com/search?sxsrf=...4dUDCAw&uact=5 ) the flavour is quite different from other types of pork: 'porkier', for want of a better description, and the fat is tastier too, especially when chargrilled/blackened:)
