Cornflake Chicken - literally seasoned chicken dipped in egg and crushed cornflakes and then 20 mins in the air fryer. One of the kid’s favourite.

Made a pancake for my son for brunch, there was some batter left over, so poured it into the pan as a treat for the dog - amazingly it even looked like him! I’m sending this to The Sunday Sport.

Vegan/plant based Christmas dinner - the “meat” was surprisingly tasty.

Super easy and very tasty, plus a meal the whole family will eat so I only have to cook one dish.
Basically chicken, sun dried tomatoes from a jar chopped up, baby spinach, garlic and herb cream cheese and grated Parmesan, a ladle of the pasta water to make the sauce silky and then mix with the drained pasta, e voila.
Mushroom omelette, tastes much better than it looks. My daily breakfast, an omelette, every day.

Sadly, Marco is not yet around to admonish me for my “Italian” dish this evening. Firstly he would tell me that Meatballs and Spaghetti is not Italian. (He’d be right.) Then he would tell me that my Marinara sauce shouldn’t contain mushrooms (right again.) And of course it should be served in a bowl not on a plate as no Italian would use a spoon with pasta. I am sure there are more errors! But it tasted great!

With a couple of glasses of a 2020 Château Le Bonalguet, Bordeaux.

Gammon steak, fried egg, with chestnut mushrooms and chips.
