Booze, and the hope it'll turn out ok.
I've got a caramelised onion, marmalade and mature chedder loaf baking right now.
Sadly i over worked the dough, so it'll be a bit flat.

Not visually great, but the taste!
The marmalade, onion and cheese are a marriage made in heaven, that and the olive oil crust.
Toasted with a veneer of pate it should be perfect.

They look great but I hate brioche buns on a burger. Would be boring if we all liked the same things.

I had a good one the other day from Waitrose.

Focaccia with Red Leicester and Monterey Jack cheese with Jalepeno rolls.

I am going to attempt to replicate it at some stage.

Lol, indeed. What do you prefer instead? I much prefer brioche buns to the majority of other rolls sold in supermarkets, as they taste of something and don't end up as a soggy mush, trapped in the roof of your mouth.
