The Parma ham was cut with an electric slicer, from a solid piece (bought from a deli). That makes a difference, as unlike supermarket-bought Parma ham, a) the ham tastes of something to start with (rather than cardboard), and b) you can slice it thicker, so that it doesn't all shrivel up in the oven.
