Nice one. For me, after using the freshest ingredients you can get hold of, *that* is what a salad is all about!
Even if you're not making vinaigrette, some nice olive oil and white wine vinegar, with a touch or rock salt and freshly ground black pepper, all mixed through so all the leaves are coated, hits the spot nicely.
Yet so often, here in the UK, even in some decent restaurants, the 'side salad' is either an afterthought, and consists of nothing more exciting than bog-standard lettuce, cucumber and tomato, and if you're VERY lucky, some red onion - but only served dry, with hee-haw dressing on it.
WTF is that about?:scratch: For me, it makes it virtually inedible! And, if they're trying to be 'exotic', you'll get it smothered instead with balsamic vinegar!!:doh:
There's just no understanding or finesse. In my experience, that only changes in the very best 'British style' restaurants, or if you dine in a European one. Greek salads, for me, in that respect, can be among the best:)

The nearest I came to fresh salad was when doing the Bear Grylls thing but I was literally starving to death ! ( they didn’t plant any pigs or crocodiles then )

Lol... See I'm not really a big meat person, and we all eat WAY too much of it anyway, to be healthy!
The only thing I'd *really* miss is chicken. Other than that, I could quite happily turn veggie, especially being married to a vegeterian who really knows how to make superb veggie food!
And I love all forms of rice and pasta, so that would bulk things out if necessary:)

Yups.... Thing is, I can eat what I like, and do [in moderation], as I have no dietary/health issues. However, if push came to shove, I could give up red meat completely, or indeed anything other than chicken, and not feel that hard done by.
It's lazy, boring and unadventurous cooking anyway, the whole 'meat and two veg' thing, and also rather outdated. The fact is, there are 100s, if not 1000s, of more varieties of fruit and veg in existence, than meat.
But how many of us have tried even a quarter of it, or would even know how to prepare and/or cook it properly?:rolleyes:

I’ll be honest, I’d rather have had your delicious looking chicken with some spuds and veg rather than the rabbit food you served it with! :) in fact, that’s pretty much what I had last night - grilled chicken breast, some new potatoes drizzled in butter and herbs and some lightly steamed curly kale.
And, yes, the tide is definitely out in your coffee cup!

I get you on the rest, and had it not been so warm, weather wise, that might've been how the chicken was served. However, on a hot summer's day, such as it was here yesterday, warm veg, for me, simply doesn't appeal, whereas a nice crispy (well-dressed) salad does!
It's not really how we're 'wired'. Salads are a big thing in Germany/Croatia, where my wife's family are from, where they do them really well, and that's also the case with Italy and me. Plus, I'm not a big potato fiend, instead much preferring rice or pasta, for carbs.
After all, it's how things are mostly done on the Med (hence the earlier comments). In the summer months, in the likes of Italy or Greece, you won't see much boiled or steamed veg, served in restaurants - and when the weather suits here, we very much like to eat in the European/Mediterranean style:cool:

Undoubtedly, if done well. My point was that I sometimes like to be a little more adventurous, plus 'meat and two veg', British style, isn't really my culture:)
Aside from European cuisine, we eat a lot of authentic oriental/asian food too, so 'meat and two veg', in the traditional sense, simply doesn't feature there.

Re: salads - My own view is that there is nothing better and nothing worse than a 'salad'. A random collection of whatever veg or greenery you happen to have available, thrown on a plate with no thought to the uncomfortable chore of chomping through it, in dry-mouthed misery, is the sad norm in most catering establishments in this country.
A salad can be a thing of wonder, it can be the simplest of accompaniments that elevate a meal or it can be a complex and fulfilling feast that you never want to end. If you treat it as an afterthought, it'll taste like an afterthought! In either case, the dressing is essential, whether simple or luxurious.
Re: meat - These days, I tend to eat very little red meat, usually as a 'treat', either on special occasions or eating out. Really don't miss it to be honest. During the week, it's mostly a mix of vegetarian, fish or chicken and trying to cut back on bread (my own Achilles Heel). I have no problems with either cooking or eating a main that contains no meat whatsoever.
So, a little of everything in moderation is good for the soul, and quality not quantity is the key to my own culinary heaven! :D

I've never been brought up to treat food simply as 'sustenance' (or to eat simply to live), but rather the opposite, and in fact in the Italian culture, it's a *major*, and probably the most important part of the day! :exactly:
Therefore, meals are never rushed, and always properly planned and prepared for - and most importantly, looked forward to and savoured! Therefore, all food eaten must always be fresh, appetising (both in looks and taste), and more often than not, simply cooked, rather than being 'fancy'.
As for salads, I couldn't agree more, and the best ones are often the simplest, but contain the freshest ingredients. What a difference it also makes when lettuce has been freshly picked from your own garden/greenhouse, compared with the (dead) crap you get in supermarkets, which tastes of nothing. That alone is a key reason why salads served in this country are often so disappointing!
In that respect, some of the salads I've enjoyed in Greece, consisting simply of mixed leaves (picked freshly that day), black olives and Feta cheese, drizzled in glorious Greek extra-virgin olive oil (which IMO is better than Italian varieties) and wine vinegar, homemade with wine from their own vineyards, sprinkled with salt and pepper, have been among the best I've had!
Of course a well executed Waldorf, Caesar or Niçoise salad is absolutely divine, but perhaps more for a special occasion or when the salad is the main part of the meal. And yes, *anything* is better than the "dry-mouthed misery", posing as a 'salad', which as you say is more often than not served in this country - now *THAT* is rabbit food, and fit for nothing else!!! :spew:
The problem here, most often, is simply a lack of passion for 'real' food. Quite clearly, anyone who can afford to do better, but regardless is happy most days to microwave a supermarket ready-meal, or open up a tin, doesn't have much passion for food, nor really cares about what they eat.

Ha - well, we'll have to agree to differ on that, especially with regards to fillet steak. Unless you're doing something like Tournedos Rossini, Steak Diane, or such like, a good ribeye, sirloin, or T-bone is *much* tastier, when simply grilled!
Fillet might be the tenderest, but it's definitely not the tastiest cut of beef:nono:

No worries mate, and glad you enjoyed it. I'm just not a big fan of goats cheese (I find it a little too acidic), and you'd never see it spread over a pasta dish in Italy, so just not my thing, although otherwise I like the look of what you cooked!:)

My daughter's request is often Goat's Cheese and Pea Risotto. It's a lovely dish to be fair. Just a simple 'white' risotto base using Chicken or veg stock, fresh or frozen garden peas, half and half freshly grated parmesan and soft goat's cheese. The finishing touch is important though, a sprinkling of fresh mint bring it all together. Always goes down a treat.
In a risotto, I could see how it could work. Still wouldn't be my thing, though. Often the 'best quality' goats cheese is the one that tastes most of wee [oops, sorry, acid]!:eyebrows:;)

Had a bit of a go at the car today, cleaned front seats with foam cleaner, had a look at the spark plugs and distributor, cleaned up a bit under the bonnet.

The fish from Aldi is real fish, not that reconstituted stuff, and it was just chilled, not frozen. Good value to at £2.39 for 4 pieces.
