It’s been a while since I made one but always use good fresh espresso. The Italian rum sounds ace. I generally use Brandy instead of Marsala, just a personal preference. Freshly grated chocolate is another winner [emoji4][emoji106]

Mexican Scrambled Eggs - fresh corn tortillas topped with scrambled eggs cooked with onion, garlic, tomato, grated Pecorino and chorizo (and a splash of Habanero Hot Sauce).

Daughter’s breakfast, a grilled tuna and cheese sandwich. The secret is a thin layer of mayo on the top side of the bread during the last minutes of sandwich flipping. :)
