Cheers, and nice one. That's one of my favs, as is crispy Peking duck with pancakes, but not totally 'cremated', like you do in many (non-authentic) Chinese restaurants! I also love a traditional Duck a l'orange:)
As for veal, we get ours from a butcher in Chester market, which comes from a local farm. It's rosé veal, of course, as shown in the following link, not the cruel shit:

We should really eat more of it, as it's low-fat, healthy and very tasty! Another meat we eat a lot of in Tuscany is goat. A good goat stew is *phenomenal* and far tastier than any beef one.
