Marco [loves his greens].
Made some meatballs (mainly for the freezer) and they were rather tasty (even if I do say so myself [emoji23]).
Here’s the recipe I concocted, if any one wants to use it.
Recipe - Meatballs
500g Minced Beef
500g Minced Pork
2 slices of Brown Sourdough - crumbed
Mix these thoroughly.
With a mortar and pestle, grind:
1 tsp Fennel Seed
1 tsp Dried Oregano
1 tsp Sea Salt
1 tsp Onion Powder
1/2 tsp Garlic Powder
1/2 tsp Black Pepper Corns
Add to meat/bread and mix thoroughly
1 good squeeze of Tomato Ketchup
A cupful of fresh Parmesan/Grana Padano
1 egg
Mix thoroughly then make 1 tsp meatballs
And roll in fine semolina to coat.
*Put assembled meatballs in freezer for 20 mins before:
Shallow frying in Light Olive Oil.
*putting them in the freezer for a bit stops them from falling apart in the pan.

Yummy, yummy! Now we're talking.... You can tell how long that sauce has been reduced down mate, and intensified, by the colour of the stuff stuck to the inside of the pot;)
That's where, after it'd been emptied, I'd be getting a nice big piece of crusty bread, and mopping it up!
