Cool... Did you overcook the spuds, just a tad? I like them crispy too, but some of them seemed burnt ;)

Looks worse than it was, just the top layer was crispy, plenty of stock left. I covered them up for the final 20 mins so they didn’t dry up to much. I never used any butter as I was trying to be a bit healthier, just a drizzle of good olive oil between each layer. The onions on top make it look more frazzled than it was underneath. Honest Guv! 🤣

Was at daughters for dinner. Was a chicken in breadcrumbs lemon juice and covered in tomato and cheese.

Yes. I know the difference, but my family have always called them croquettes, even my mum and she was French.
Lol - well I guess you can call them whatever you like, but that doesn't change what they traditionally should be... Tomorrow we'll be having 'lamb chops', but it'll actually be chicken - we just like calling it 'lamb chops'! :D
