Not cheap, but it's pretty much the best chicken you'll eat, and a totally different animal from anything found in a supermarket, in terms of texture and flavour, rather like chickens used to taste about 30 years ago, before the intensive farming methods we have now ruined quality (in order to sate our desire for 'cheapest is best'), and when it was eaten as a treat, for the likes of Sunday lunch, not all the time as now, and almost abused like 'junk food'.
With poultry, even more than other meats, you really do get what you pay for - and then it's simply about treating it and preparing it with the respect it deserves. I've always loved nice sauces with all meats, as my mum was a superb cook and very good at them, plus was used to regularly travelling to France, from the early 70s onwards, and sampling the glories of French cuisine - and fortunately Del's even better at them than she was!:)
As for the restaurant - would you come then, lol? Might happen at some point later, so it's still a possible plan, but we'll see what the future holds:cool:

Made up some bacon for tomorrow's food. Needed cooking. Tastes superb.
Was gently fried then air cooked to finish.
