Ok, now today's starter for lunch... Scallops in a pea and Prosecco sauce, covered in breadcrumbs, and served in their shell with homegrown micro-greens and fresh chives from our garden, garnished with a wedge of lemon:

Followed by pan-fried fillet of Welsh black beef in a homemade Bordelaise sauce (essentially red wine/Médoc with lots of chopped shallots, beef stock and butter) with homemade dauphinoise potatoes (made with fresh Jersey cream), San Marzano vine tomatoes, fine green beans and white asparagus:
