Melenzane Parmigiana - Healthier version, brushed the sliced aubergine with olive oil and lemon juice before roasting in oven.
Then layered with tomato ragu, mozzarella, parmesan and baked for about 25-30mins on medium oven.

An unusual but tasty roast made from 10 hour slow-cooked shoulder of pork, seared in a skillet, served with spicy roast potatoes, steamed carrots, roast mediterranean veg and a gravy made from the pork juices (with fresh orange juice, onion, garlic and chipotle).

Everything fried.
Went for a thick tempura batter. Mistake. Thinner is better I think.
Still pretty good, though.
