Yes, you are right about venison being lean/potentially dry (I also grill sausages/bacon - Benecol on the toast, as I tend to store cholesterol quite effectively :().
But the flavour was absolutely fantastic; like you, venison is one of my favourite meats.
Fliss used some of the sausages to add some flavour to turkey mince (along with garlic, red wine, onion and tomato for a basic meat sauce) for a lasagne yesterday evening (no photo's though:lol:) - turned out bloody marvellous.
i am not big on gamey stuff.. dont mind a little in a pie etc for extra flavour but its a bit strong for me. My dad was into those things tho, being a best pal of a gamekeepers son.. They went shooting together a lot.
