Slight burning on parts, as I left it too long but it tastes fab.

Just let it rest.

Christmas Day compromise (as I loath turkey, goose, partridge, and most 'white' meat):

28 day aged Herford fillet steak, cooked a point, with a pepper sauce, chestnut mushrooms, roast potatoes, parsnips and carrots, and steamed brocolli, green beans and sugarsnap peas.

Oven baked salmon fillets with a parsley sauce. Boiled potatoes and steamed asparagus, red peppers, green beans and brocolli.
