Cheers... Del's 'speciality' is sauces. She's good at imbuing them with flavour. The sauce is very simple, and consists of fresh chicken stock, LOADS of freshly-squeezed lemon juice and grated lemon zest, capers, then finished with a good knob of butter, which just adds a little rich silkiness and smoothes out some of the acidity of the lemon juice - a Tuscan classic!:)
It's also nice substituting the lemon juice for dry Marsala wine, and adding some sliced champignons, for an alternative take on using chicken breast, or going the whole hog, topping it with fresh sage and Parma ham, and turning it into a classic Saltimbocca alla Romana:cool:
