An interesting combination, but not one bit of it would go to waste :) If I look at it long enough, the cauliflower cheese looks like a poodle's head. Or maybe that's just me.
Poodles head? Lol!
The bacon was wrapped around the chicken during the roasting process, hence its presence, which keeps the flesh nice and juicy and adds flavour to the gravy:)

Looks nice, but I can only eat chicken once it has become cold after cooking. And no trace of skin or bone either. Love cauliflower cheese, but Happy doesn't like cauliflower.
What is for dessert?
Pudding was a fresh fruit salad - no pics, sorry.

Cheese, pickles and some St Lucian rum.

Glad you enjoyed it, mate. With roast chicken, the bacon just keeps the meat moist, and is also nice to eat on its own afterwards. With cauliflower cheese, Del roasts it first, rather than boiling it, before putting it together with the sauce and it all going back into the oven - maximises flavour that way...
Her cooking is all about maximising flavour, as we don't do bland:)
