Ah, if it was shop-bought, forget it. Needs to be made fresh (with the good ingredients), and when ready, served up immediately! If you like that kind of thing, I'll get Del to make you some when you visit. Takes 10 mins, tops, with plenty of 'wrist action' (whipping)!:D

Worst supermarket trip ever this morning. After being stuck in a stationary queue on the motorway due to an accident, I finally got there, only to find that my favourite apple danishes (my only reason for me being there) had apparently all been bought up by some greedy get in trackies with a Kevin Keegan perm. Some people have no consideration, unlike us lot on here :)
Tony, I'm betting (if you're not already familiar) that you would love this "custard pie" they sell in France. It's a sort of thick flan and the "custard" looks like a blow torch has been used on the top, and the custard is so stiff you can pick it up without it falling apart.
Someone said it was called "flan patissiere". Which may be correct, all I know is when I'm in France I can't walk past a patisserie without buying one.
custard skin is basically protein
