Question: why is the coffee I'm making richer/tastier now, with your old grinder, even though I'm using the same beans?:)

grinding it to right grade(consistently) and without damaging it or burning it.

To help with consistency, a calibrated tamper, such as the Espro, is a great piece of kit.
A distribution tool will also help get a good coffee.

The Pellini coffee I bought is rather nice.
