I suspect it is because the actors, director and the stuntmen and stunt arrangers all knew what a real fight looked like as they were from an age where settling disputes with violence was common. But it's just my theory.
Watched the Maltese Falcon again, I never before quite got how much of a bastard Sam Spade was, so used to childishly thinking the main character is always a ncie guy.

When asked by David Letterman what was his motivation for what he is doing, Tom Savini, the famous special effects artist and actor, told he saw this movie when he was 12 and that was his motivation and he named his son 'Lon' after Lon Chaney.
The film opens at a memorial for Chaney at the Lon Chaney sound stage. The camera pulls in to a closeup of the plaque that designates the building. The face on the plaque is that of James Cagney not Lon Chaney. This was done because Cagney and Chaney looked nothing alike.
