If you were East European you would almost certainly cook and eat them, even though 'coarse' fish aren't great to eat. I certainly wouldn't bother. "Catch and release", while not enforced by law, is encouraged. And there are rules around catch limits and fish sizes.
Yes, I have tried carp once (in a restaurant, not caught myself) and it was horrible! Most commercial lakes don’t allow you to do anything other than catch and release immediately these days, much better for the fish, only real exception seems to be when you are match fishing.
Yes, if you want to eat what you caught, sea fishing is the way to go.
