I hope that someone can advise me, please.
I have a extractor fan, like this. Is there something that I could plug it into so that I could vary the speed?

You could use a Thyristor ( SCR ) or a Triac circuit to control the fan speed. One is detailed here using a arduino kit https://circuitdigest.com/microcontroller-projects/ac-fan-speed-control-using-arduino-and-triac
