A pair of valves wanted

My mono blockbuild is coming on nicely now so time for a pair of valves .
I am after any of the following in a pair not looking to spend mega bucks as I would like to see what suits the amps then get some better ones if that makes sence

are you still at a stage where you can use any valve? I would have thought at some point early on you would have to build towards a certain family of valves? I'm no expert though, just wondering why commercial amps are so limiting (other than a certain Tektron model).

The mono blocks are been made for me with a bias switch so I can tube roll if I want to, that is just a basic list of valve I can use.
