Well, first of all, I donīt understand anything about turntables, but I want to start listening a few vynilīs. So I was thinking buy a Rega planar 1 and a phono amp.What you think?Better to start with a Planar 3?The 3 is expensiver, I donīt want to spend so much money.Or the planar 1 would be a waste of money?My amplifier is a Densen B 110 with an Epos M 15

A 3 is better than a 1 but a 1 is good for the money. But don't skimp on the phono stage, they make a huge difference to the quality of the sound, arguably more so than the deck or cartridge.

The Planar 1 is 300€ and the Planar 3 is 650€ here. And it needs a better phono stage.

Agreed, the phono preamp is just as important as the rest of your setup. It makes sense to spread your money around, and spend equal amounts on the ‘table, cartridge, and preamp. Of course this is not a hard fast rule. Plenty of leeway to be had.

Planar 1 and the Mini is a great plug n play option. Nothing out there competes at anywhere near the price IMO.

And the rega Planar 2? Is it much better, or better go for the 1?

Yes, the P2 is better but whether spending the extra, depends on how much you will be playing records.
