Pi (MoOde) Without a Wifi Network?

I am sort of considering exhibiting at the strange gathering that happens every year near Melton Mowbray, but it stuck me that I have no way of controlling the Pi unless the hotel wireless network can be used. Even then I would have to go through the minefield that is the Pi/Moode setup procedure and I wonder if this is even possible without an ethernet connection.

Is there an easy way to control the Pi without using a web browser for remote control?

Why not take a router with you as well? I often see them hidden in a corner in manufacturer demo rooms.

It's not like I need any internet access.
