I am about to start building a pair of floorstanders, I have some silver multi-strand speaker cable bought before silver rocketted in price. Would it be suitable for the internal wiring?

I used Kimber 'TCX' for internal speaker wiring. Much prefer it to all that Ag stuff.

What about Cat5 ethernet cable?

I'm sure it would. I can only give a 'generic' reply. Silver -vs- copper is but one of a zillion variables in a cable (or circuit) design. To my way of thinking (other things being equal) silver is the way to go. eg

Many say this or that in favour of copper and TBH I guess there is not much in it. My experience is that silver is better. Copper has more resistance than Silver and if any copper advocate said that was not important I would be surprised if they preferred Iron over Copper.

I think I will try the silver cable first and see what its like. My 80 year old father in law is helping me with the cabinet build (when they arrive). Got to say I am nervous about the veneering bit.
