I have the pitch control disabled on my deck but can some one tell me why you need to use PC jumper to connect middle leads

You don't need a PC jumper to connect them. It is just a method that is convenient and safe.

My theory was that the control system is expecting to a see a signal across the two pins, so the jumper was the easiest way to achieve this.

I am in the process of removing my pitch slider but can seem to find a definitive post on what I need to do. I presume I can't just unplug it from the pcb and leave it at that? Sorry if I have missed something? Can someone please help?

You need to jumper a couple of the pins in the plug. Can't remember which ones though.
