A quick google shows boxes with multiple inputs to 1 output but I want 1 input (SB Touch as source) with 2 outputs (1 for a headphone setup and 1 for a speaker setup)

Any recommendations?

You could have used the very same device but use the input as the output instead :doh:

You don't really need a switch when it's this way round. Just connect the SBT to both. My headphone amp (iFi Audio iCAN) very thoughtfully has a second input which is connected to the first so I can use it to daisy chain an amp (the TP20 mkII in this case) but if you don't have that then all you need is a set of these:
