A dozen fresh-water prawns, lightly tossed in a little melted garlic butter with some oregano, before having a dessertspoon of pesto sauce stirred in. Served on a bed of fresh penne pasta with steamed red pepper, broccoli, English fine beans, peas and sweet corn.

Washed down with half a bottle of 2006 Château Le Boscq, Saint-Estèphe.

Followed by a large naval orange for pud.

No, no:
Boiled potatoes, sliced green beans & beer stew.
(Braising steak, carrots, onions, celery, bay leaf, rosemary, black pepper and real beef stock stirred into a pint of Newcastle Brown to make the gravy & in the oven for two hours)

....that, my friends, is comfort food!

That sounds a tad sophisticated to be comfort food :)

Marco
08-09-2013, 22:31
Next time, Chris, try some Polenta with it instead of potatoes - that is, if you've ever made Polenta before. If not, I'll ask Del to post instructions. It sooks up the gravy of the stew really nicely and has a comfortingly soft texture that is rather warming :)

Marco.

Marco

That sounds a tad sophisticated to be comfort food :)

Why shouldn't comfort food be 'sophisticated'? Mind you, the lamb chops and broccoli you had sounds much better than some of the shite you usually eat!! ;)

Marco.

The Grand Wazoo
08-09-2013, 22:36
Nah, I'm not so struck on polenta mate, though others in this household seem to think it's the best thing since crushed maize! I'm part Irish - spuds is where it's at!

Marco
08-09-2013, 22:57
Lol - no worries! I like spuds, but prefer to get my starch from rice, noodles and pasta - especially the last one (home-made of course). Guess that makes sense, being Italian :)

Marco.

The Grand Wazoo
08-09-2013, 23:01
Well, rice, noodles and pasta are great & I eat a lot of them. Tabuli and cous-cous too, but if I'm going to eat maize, I enjoy the sport of picking bits of kernal from between my teeth for hours afterwards!

Barry

Marco.

Some would say my 'comfort food' is sophisticated! Actually most comfort food is usually quite unsophisticated: rather it is the food of childhood, that of the nursery. Why do you think a lot of the puddings served in 'Gentlemen's Clubs' is pure stodge: 'spotted dick'; treacle pudding etc. - all 'Nursery' food.

The Grand Wazoo
08-09-2013, 23:15
Public school rather than nursery, I think Barry.

Polenta (http://en.wikipedia.org/wiki/Polenta)? - Possibly. Gnocchi? - maybe. But "spuds" - Oh yes!

But there again, anything served up by Del is divine; so yes please, let's have her recipe. :)

Marco

Comfort food for me would be my mum's home-made chicken noodle soup!! I don't 'do' stodgy puds :nono:

Okies, will do... Btw, Parmesan cheese is a *must* ingredient in classic Italian Polenta, and it takes HOURS of continual stirring to get right, which when done, comes out as a creamy mashed potato consistency. I hope that the one Chris has tasted features those critical aspects! ;)

You can also cut it into cubes and lightly fry it, then serve it as a 'cake' with some parma ham and a sprinkling of rock salt and fresh basil on top. Wash that down with a nice glass of Bardolino, and yer laffin' - yum yum!

Marco.

The Grand Wazoo
08-09-2013, 23:36

Yes, I had it a few times in Sicily and in Rome.
I slightly prefer the chunky version...but not by much!

Marco
08-09-2013, 23:42
No worries - it can be an acquired taste :)

Since Bazza mentioned comforting desserts earlier, mine would be a classic Italian Zabaglione, or perhaps a wonderful raspberry crème brûlée, accompanied with some home-made shortbread and a glass of Vin Santo - awesome!

Marco.

Urghh, can't stand stir-fried veg. There is nothing remotely edifying about having a plate of barely cooked veg dumped in front of you that has been shown the Wok/Frying Pan for milliseconds, just long enough for them to get a bit greasy, but not long enough to be cooked properly, but just a bit tepid. The worst are stir-fried peppers. Well actually they are not fried, because they are basically raw!:mental: just like the rest of the poor bleeders tossed and then abandoned as if they lingered too long in a pan they had no place being. It's a travesty of cooking, well it's not cooking really....is it....because the veg is NOT COOKED:D

Half an avocado, with a little oil and tarragon vinegar dressing to start.

A rather wonderful curry, cooked from scratch using some of the 2012 Christmas turkey, onions mushrooms, peppers and green beans along with basmati rice and my recipe of onion salad (very finely chopped onion, cucumber and tomato, lemon juice, mint, coriander, chili and salt). The same, but with tofu and a small quantity of plain yoghurt stirred in instead of meat for the veggie folks. Very cold Tanglefoot beers all round - fantastic!

Pili pili chicken, but used monkfish instead and was much better. Everything finely chopped except for the monkfish - 2x tails cubed. Everything done in a large frying pan or wok. Stir fry the following for a minute:

6tbsp vegetable oil
1tsp mustard seeds
1tsp cumin
1x onion
3x cloves garlic
5cm piece ginger

Then add in:

1/2 of a green, red and yellow pepper
3 to 6 green chillies
1tbsp curry powder
1tsp turmeric
Monkfish tails or chicken breasts

Stir for 10mins max and add in:

2x chopped tomatoes
Few tbsp fresh coriander
Salt to taste

Cook for 5 mins and serve with rice. Amazing, ripped off from a favourite curry cookbook of mine and committed to memory now! 16mins cooking time and 10mins prep time for a real restaurant recipe (was on the menu at Kenya's top Indian restaurant the Safeer in Nairobi, oh and a place in Leicester, The Curry Fever).

Corgette soup with fresh home made bread. We used the stock from a chicken and chorizo stew in the soup and its given it a nice warmth. Fresh garlic and shallots from the garden in there too.

All took about ten minutes in the pressure cooker. Delicious.

Olive oil is too strong-tasting for Indian food, any old generic vegetable oil from the supermarket will do for this recipe, but for other curries ghee is critical and gives 'that restaurant taste'. As for the curry powder, I make my own, and there is a difference between ground coriander, chilli powder etc. and fresh. It adds a nice depth during cooking.

Grinding dry chilies can be a rather hazardous occupation - take care here! I once filled the entire downstairs floor of our house with a noxious atmosphere while grinding some up with a pestle and mortar. It took hours to clear and our throats took about half a day to get back to normal.

Once whilst chopping up some fresh chillis, I accidentially got some of the juice in my eye! I was in complete agony for about half an hour - my eye watered like mad. I went to see the University doctor (I was doing my PhD at the time), however by the time I saw him, there was little he could do. So I had to let Nature take it's course, which it did, thankfully resulting in no permanent damage to my sight. It was a sobering and unforgettable experience.

I seldom buy from fish n chip shops, as 9 out of 10 times they are just soft white and greasy. The odd occasion i find a good shop , big fat brown crisp chips. MMMmm nice.

Expediency! When the grandkids (who live with me) get back from school each day, they want food there and then. It's no good guessing what they want in advance, 'cos the finicky little so and so's tend to refuse food that is plonked in front of them without prior approval.

Funnily enough I actually had beef wellington on Sunday - and it came from a supermarket, unusually - we normally cook almost all our food from scratch, but we needed something quick and this looked good. It was made from rather superior ingredients though - fillet beef, mushroom duxelles made from ceps and chicken liver pâté all wrapped in puff pastry.

Nowt posted here this year!!

I've been trying to edificate our French neighbours about proper food. Last time they were here it was Rhubarb Crumble and custard. Serge promptly demanded a cutting and they now have a big patch in their garden. They had tried the Creme Anglaise before and were a bit wary of it. Gave them some good thick Birds and they now buy from the English section in the local supermarket.

Anyway, tonight it was proper pancakes - none of these thin rubbish crepes that they do. Lemon and sugar too instead of whatever it is that they use. Fresh lemons from our tree of course.

It looks like I may need to give them a cooking lesson and another cutting:lol:

I though the French are supposed to know about real food:doh:

I think the thing that surprises me most about living here is that the French are starting to follow the USA/UK model.

When we first moved here, all the people seemed 'normal' shapes and the supermarkets seemed a bit foreign!! However, MacDonalds culture seems to have arrived in earnest, I see trolleys filled with fizzy drinks, ready meals and cakes and there are more fat arses around than you could shake a stick at.

I agree with Marco about traditional French and Italian cuisine. I love it here and I lived in Milan (Paderno Dugnano) for a while. The food was always exquisite.

Its just that some traditional UK food is great and a bit under-rated too. I was surprised how much Serge and Josette loved the Rhubarb Crumble. Maybe just because it was so different and a bit of a shock to their pallets.
