Got the drinks, selection of meat, and a range of spices. I'll be trying out a couple of trusted seasoning methods, including a West Indian pepper and garlic mix.

Anyone with some good BBQ tips?

Reggae Reggae sauce. Jerk/barbecue flavour. Covers up a multitude of cooking sins :)

Jeez !! And if anyone doesnt know, the Jamaican Wray and Nephew Overproof white rum looking all innocent in the middle is serious stuf !! go easy is the sensible approach here :lol:

We are busy sticking some of the meat on skewers. Keeping in line with the religious and personal preferences of some guests, there are different types of meat and they are each placed in different containers. What's been done so far is:

Going from left to right:
Container 1 is beef that has been marinated in casareep. It is a dark brown syrup kind of extract made from wild cassava. It is made by the Amerindians in the Amazon (where I am from) and used to season up wild meat normally. Ginger hot pepper and garlic give an extra bite to it.
Container 2 is lamb marinated in Ketjap Manis. It is an Indonesian type sauce that looks like soya. I added laos (a relative of the ginger that smells and tastes far sweeter. Give it a try with cooked or stewed meat.) and pepper and garlic.
Container 3 is pork. Marinated in curry and tumeric.
Container 4 is spare ribs. Marinated in paprica, thyme, red wine.
The chicken pieces, Aberdeen Angus burgers (from Costco and weighing 6 oz each:eek:) and sausages are in the fridge. I would recommend those Costco burgers. Only 8 in a pack and costing about £9 a packet, but they are MASSIVE.

Incidentally what are peoples views about charcoal barbecue vs those gas burner things - I'm strictly a charcoal grill man myself - that's the whole point of it surely?

The key to an excellent barbecue, as you well know, is marinating the meat (preferably overnight), which tenderises it and also adds flavour! Love Ketjap Manis. Del uses it a lot in oriental cooking. Spare ribs rule, too - I must post Del's recipe for her hot 'n' sticky barbecue chilli sauce for ribs. It's sublime!

Most Brits I know, simply toss the meat on the barby with next to no preparation, and as such the results are total blandsville, in comparison. Also, fatty meats tend to work best, such as lamb and pork. If you're going to use chicken, then wings and thighs are best. You need MEAT ON THE BONE for maximum FLAVOUR.

Furthermore, you've added some SPICE - and that's gotta be done, baby!! :exactly:

I like to get a 2 inch thick slab of sirloin cut to spec at the counter then cut it into steaks ( 2 big-un's or three smaller ones) coat with extra virgin, then sea salt and black pepper - bang it on at max heat then move them out to the edges once both sides are browned, how long you leave them there depends on how well done you like it. I'm an aristocrat so I like medium rare. You won't get a better steak in this country no matter how fancy the resteraunt.

Can you make that post before the weekend;)? The guests were overly impressed with my marinating skills and are keen to bring their own meat for the BBQ this time so that I am not financially impeded.
I am surprised you know about Ketjap Manis. It is a well kept secret as far as tongue biting recipes are concerned. Add a bit of powdered coconut to the sauce :eyebrows:.

LOL... I'll see what Del can do, and if she's got time to write out the recipe. We go shopping once a month to Liverpool and stock up on our Asian food supplies. Tamarind paste, fish sauce, lime leaves, middle Eastern herbs, like Zatar and Dukkah, Shao Hsing rice wine, for use in Chinese cooking, huge bags of Jasmine and Pilau rice - honestly, you name it! We have that type of food at least twice a week :)

I'd get bored with pasta, otherwise! ;)

Sods law dictates the AoS BBQ will be arranged and we will jinx the summer, it'll rain solidly for 40 days and 40 nights, just wait and see. Ever the eternal optimist me... :lol:
