We always cook a large Chicken for our Christmas dinner. We never liked turkey that much, bit dry.

A time for lots of red wine and a fine plump bird stuffed to the gunnels. Then for afters, Brand X 'Morrocan Roll' on vinyl and an afternoon of Prog Rock also on vinyl. No TV licence, no TV.

I remember a few Christmas' ago you and your lady came to stay at the Star Inn at Harome and almost got snowed in. It was such a shame that we couldn't get together for a beer at the time but I was delivery driving for my business and just couldn't make it. Now I no longer live in that area and will miss the Star. In fact there are quite a few things I shall miss about Pickering. Onwards and upwards I guess. As one story ends another begins.

I'll miss the Star a great deal. Whilst I had my florists business we would deliver there quite often and used to set up various wedding functions there. It was only during the winter that I never really looked forward to driving there.

Then, Shane, you're either buying cheap, horrible, supermarket (battery-farmed) turkeys, like these poor buggers, cooped up in a hell-hole:

...particularly if it's the frozen shit, or not cooking the turkeys you buy properly! :exactly:

If you buy quality, fresh, free-frange/organic turkeys from a decent butcher, and cook them properly (stuffing the skin with a sage butter and covering it all over with nice streaky bacon, first before it goes into the oven, basting the bird continually, whilst it's cooking), trust me, even the breast won't be dry. You must also let the bird rest for a least an hour before carving it (perferably more) - this is absolutely essential!

The above process will also make a wonderfully rich gravy, to pour over the top of your turkey, roast pots and veg, particularly if you reduce the gravy down slowly, using all the meat's natural juices to form the base of the gravy, and stir in a little dry sherry at the end (making sure that all the alcohol is cooked out before serving).

However, the juicy and succulent leg and thigh meat is where it's at (and if you follow the above, then that will never be dry) - yum yum!! :)

That said, we're having roast goose this year, which is even better!!! :D

I remember when I used to help my dad out in his fish and chip shop in Glasgow, and when some of the girls working for him, when serving customers for chicken and chips, rather ridiculously didn't know the difference between a leg and a breast of chicken (!) so he said to them: 'if you can't tell the difference between a leg and a breast, you must have a hell of a job getting dressed in the morning!!'

They just gave him a funny look, because the daft bints were usually too dumb to get what he meant... Funny as fuck, though! :D
