    Do not buy the St. Agur cream cheese spread. Lethally moreish.

    Why would somebody buy the 'spread' version of one of the softest and most spreadable blue cheeses around? St. Agur is very yummy stuff though. My family moan about me stinking the fridge out with that and the 'Le Rustique' Camembert I keep buying!
    It is impossible for anything digital to sound analogue, because it isn't analogue!

    At the risk of having people 'stink out' their kitchen, I would say soft cheese should be allowed to ripen at room temperature. To do this in a fridge IMO spoils the taste.

    Of the soft cheeses, one of my favourites is Pont L'Eveque

    I misread your post and thought you were enquiring what Ossu-iraty cheese was. The Demi Pont L'Eveque is an example and one of my favourites.
