You're getting confused between the City Of Stoke On Trent and the town of Stoke Upon Trent. The city is a collection of towns. Stoke upon Trent is a lot smaller than Wrexham. Wrexham population is 60,000 and the whole of the 'Potteries' is 260,000. Stoke Upon Trent is only a small fraction of that, maybe 20,000?
Still I agree it is surprising there is no Chinese restaurant. There are at least 6 Indian restaurants.
