    In certain instances it can be, depending on how it's cooked, and which type of meat it comes from. With sausages, however, the attraction of fat is likelier to be how it increases moisture, and thus influences texture, hence a 'nice juicy banger'!

    However, in reality a 'less juicy', drier (but not too dry) and firmer 'banger', with a higher-meat content [and less 'bulking out' ingredients], will be tastier - that is if you prefer the flavour of pure meat, as opposed to that of simply fat and grease!!

    The same also applies to burgers. As ever, it's all about achieving the right balance between moistness, texture and flavour.

    I'm really sorry but I'm sitting here giggling like I'm the classroom again, you lot going on about enjoying a firm, meaty sausage.

    That said I bought some sausages from a farm shop once, pork and leek. They looked amazingly good, firm and meaty.....snigger.... but when cooked they were absolutely revolting, never went there again. Where I used to live there was a family butcher who made his own and they were brilliant, so tasty and many varieties too.

    If you find a good traditional butcher they are best for produce, wish there was one around here.

    I don't find meat to be tasty, apart from lamb, and can't for the life of me understand the following steak has. Vegetables and fish are much tastier and have enormous variety. I have had tasty sausages from our local butcher but after a few bites realised their salt content was several orders of magnitude higher than recommended - straight in the bin with the rest of 'em.
